  • 3 cans (5 oz each) quality tuna (wild-caught Albacore or Yellowfin)
  • 2 1/2 celery stalks, chopped
  • 1/2 English cucumber, chopped
  • 45 radishes, chopped
  • 3 green onions, chopped
  • 1/2 medium red onion, finely chopped
  • 1/2 cup pitted Kalamata olives
  • Fresh parsley and mint (about 1 cup each)
  • Zesty Dijon dressing (made from Dijon mustard, lime juice, olive oil, sumac)

Instructions

  1. In a small bowl, whisk together Dijon mustard, lime zest and juice until combined. Gradually whisk in olive oil until emulsified. Add sumac, salt, pepper, and optional red pepper flakes.
  2. In a large bowl, combine drained tuna with chopped celery, cucumber, radishes, green onions, red onion, olives, parsley, and mint. Gently mix using a wooden spoon.
  3. Pour dressing over salad and fold gently to coat all ingredients evenly.
  4. Cover and refrigerate for at least 30 minutes before serving to enhance flavors.
