  • 4 skinless, boneless chicken breasts (about 1 ½ lb)
  • 12 asparagus stalks, ends trimmed
  • 1 ounce sun-dried tomatoes, chopped
  • 4 slices mozzarella cheese
  • Olive oil
  • Italian seasoning mix, garlic powder, smoked paprika, sea salt, and pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season chicken breasts with Italian seasoning, garlic powder, smoked paprika, sea salt, and pepper on both sides.
  3. Carefully cut pockets in each chicken breast without cutting through completely.
  4. Prepare the filling by rolling three asparagus stalks and some sun-dried tomatoes in each slice of mozzarella.
  5. Stuff the chicken with the mozzarella-asparagus rolls and secure openings with toothpicks.
  6. Heat olive oil in a cast-iron skillet over medium-high heat; sear stuffed chicken for 3-5 minutes per side until golden brown.
  7. Transfer skillet to the oven and bake for 15-20 minutes until internal temperature reaches 165°F (74°C).
  8. Remove toothpicks before serving.
