  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the ground beef with diced onion and minced garlic until browned. Drain excess fat.
  3. Stir in the enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
  4. Layer half of the corn tortillas in the baking dish, followed by half of the beef mixture and half of the cheeses. Repeat layers.
  5. Bake for approximately 25 minutes until bubbly and golden brown on top.
  6. Let rest for a few minutes before slicing; garnish if desired.
