  • 2 cups shredded carrots
  • 1 cup pecan chips, plus 1/2 cup for topping
  • 1 container (about 16 oz) cream cheese frosting
  • 1 (16 oz) bag Ghirardelli white chocolate melting wafers

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a stand mixer, beat sugar, oil, and eggs until combined.
  3. Mix in flour, baking soda, baking powder, cinnamon, and salt until just combined.
  4. Fold in shredded carrots and pecan chips; pour batter into the dish.
  5. Bake for 30–40 minutes until a toothpick comes out clean. Cool completely on a wire rack.
  6. Crumble the cooled cake into fine crumbs in a large bowl; mix in cream cheese frosting until moldable.
  7. Form mixture into balls and chill for about an hour.
  8. Melt white chocolate using a double boiler; dip chilled truffles and sprinkle with chopped pecans.
  9. Allow chocolate to set before serving.
