  • 150g full-fat mascarpone (cold)
  • 60g powdered sugar, sifted

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare an 11×16-inch sheet pan.
  2. In a mixing bowl, beat eggs, vegetable oil, and sugars until smooth.
  3. Sift dry ingredients into the wet mixture; fold in freshly shredded carrots.
  4. Pour the batter into the prepared pan and bake for about 25 minutes.
