  • 1 head cauliflower (chopped into florets)
  • 2 slices bacon (chopped)
  • 1 tablespoon olive oil
  • ¼ cup yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup almond milk (or milk of choice)
  • 2 tablespoons all-purpose flour (or tapioca flour for gluten-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • ½ teaspoon salt
  • 2 tablespoons chives (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the bacon until crispy; set aside.
  3. Boil water in a saucepan and cook cauliflower florets for about 5 minutes; drain.
  4. In the same skillet, add olive oil, onion, and garlic; sauté until softened.
  5. Whisk almond milk and flour in a bowl; pour into the skillet and bring to a low boil.
  6. Add cheeses and salt, whisk until smooth; stir in cauliflower until coated.
  7. Transfer mixture to an 8×8-inch baking dish, top with bacon, and bake for about 20 minutes until bubbly.
