  • 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 1¼ cups white long-grain rice
  • 2 cups fresh broccoli florets
  • 10.5 oz cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers
  • ½ cup milk
  • ½ cup sour cream
  • 2½ cups chicken broth

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut the chicken into bite-sized pieces, season with Italian seasoning, salt, and pepper.
  3. In a large pot, melt butter over medium heat; cook chicken until golden brown.
  4. Add chicken broth, olive oil, and rice to the pot; bring to a boil and then simmer covered for 6 minutes.
  5. Mix in broccoli; cover and cook for an additional 9 minutes until rice is tender.
  6. Combine cooked ingredients with cream of chicken soup, milk, sour cream, and half the cheddar cheese.
  7. Transfer mixture to a greased casserole dish; top with remaining cheese and cover with foil.
  8. Bake for 15 minutes; uncover and add crushed Ritz crackers mixed with melted butter on top.
  9. Bake uncovered for another 10 minutes until golden brown.
