Ingredients
- 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
- 1¼ cups white long-grain rice
- 2 cups fresh broccoli florets
- 10.5 oz cream of chicken soup
- 2 cups shredded cheddar cheese
- 1 cup crushed Ritz crackers
- ½ cup milk
- ½ cup sour cream
- 2½ cups chicken broth
Instructions
- Preheat oven to 350°F (175°C).
- Cut the chicken into bite-sized pieces, season with Italian seasoning, salt, and pepper.
- In a large pot, melt butter over medium heat; cook chicken until golden brown.
- Add chicken broth, olive oil, and rice to the pot; bring to a boil and then simmer covered for 6 minutes.
- Mix in broccoli; cover and cook for an additional 9 minutes until rice is tender.
- Combine cooked ingredients with cream of chicken soup, milk, sour cream, and half the cheddar cheese.
- Transfer mixture to a greased casserole dish; top with remaining cheese and cover with foil.
- Bake for 15 minutes; uncover and add crushed Ritz crackers mixed with melted butter on top.
