  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • pounds boneless, skinless chicken breasts, thinly sliced
  • 1½ teaspoons Italian seasoning
  • ½ teaspoon smoked paprika
  • Kosher salt and freshly ground black pepper, to taste
  • 1 cup shredded provolone cheese
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Sauté sliced onion and bell peppers with salt and pepper until soft, about 6–8 minutes. Set aside.
  3. Add remaining olive oil to the skillet; cook thinly sliced chicken with Italian seasoning and smoked paprika until browned, about 7–10 minutes.
  4. Return the vegetables to the skillet, mixing well.
