  • 3 boneless, skinless chicken breasts
  • 2 tablespoons fajita seasoning
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 large onions
  • 8 tortillas
  • 1 cup Tex-Mex cheese

Instructions

  1. Season the chicken strips with fajita seasoning.
  2. Heat olive oil in a skillet and cook the chicken until fully cooked. Set aside.
  3. In the same skillet, sauté onions until translucent; add bell peppers and remaining seasoning. Cook until tender, then return chicken to mix.
  4. Heat another skillet, melt butter, and place a tortilla inside.
  5. Fill half with chicken mixture and cheese, fold over.
  6. Cook until golden brown on both sides and cheese is melted.
  7. Cut into quarters and serve.
