  • 3 boneless, skinless chicken breasts
  • 8 ounces sliced mushrooms
  • 1 can (18 ounces) cream of mushroom soup
  • 1/2 cup sherry wine
  • 6 slices Swiss or Muenster cheese
  • Olive oil and unsalted butter for cooking
  • All-purpose flour, kosher salt, and black pepper for seasoning

Instructions

  1. Preheat your oven to 350°F (177°C) and lightly grease a 9×13-inch baking dish.
  2. Season chicken breasts with salt and pepper, then dredge in flour.
  3. In a skillet, heat olive oil over medium heat. Brown the chicken for about 4-5 minutes on each side. Remove and set aside.
  4. In the same skillet, melt butter and sauté mushrooms until golden. Deglaze with sherry wine.
  5. Stir in cream of mushroom soup until combined.
  6. Place browned chicken in the baking dish and pour the mushroom mixture over it. Top with cheese slices.
  7. Cover with foil and bake for 30 minutes; remove foil and broil for an additional 1-2 minutes until bubbly.
