  • 3 tablespoons soy sauce
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1/2 cup peanut butter
  • Lime juice
  • 1 tablespoon brown sugar
  • 4 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 16 skewers

Instructions

  1. Marinate the chicken: Whisk together coconut milk, soy sauce, red curry paste, fish sauce, brown sugar, garlic, curry powder, salt, and white pepper in a large bowl. Add chicken strips and coat evenly. Cover and refrigerate for at least 1 hour or overnight.
  2. Make the peanut sauce: In a saucepan over medium heat, combine peanut butter, coconut milk, brown sugar, red curry paste, soy sauce, fish sauce, and lime juice. Whisk until smooth; bring to a simmer for about 5 minutes until thickened.
  3. Prepare skewers: Soak wooden skewers in water for 30 minutes if using. Thread marinated chicken onto skewers.
  4. Grill the chicken: Preheat grill to medium-high heat and grill skewers for 3-4 minutes per side until cooked through.
  5. Serve: Enjoy warm with peanut sauce on the side.
