Ingredients
- 1.5 pounds boneless, skinless chicken thighs
- 2 medium sweet potatoes

- 2–3 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon black pepper
- 1–2 tablespoons lemon juice
- 3 cups baby spinach
- 1/2 teaspoon salt
- 1 serrano pepper or jalapeño
- 1/4 cup chopped cilantro
- 2 tablespoons coconut oil or avocado oil
- 1 (14.5 oz) can crushed tomatoes
Instructions
- In a large sauté pan, heat oil over medium-high heat. Sauté diced onion and pepper until softened.
- Add chicken and brown on all sides.
- Stir in garlic, ginger, and spices; cook for 1 minute until fragrant.
- Pour in crushed tomatoes and mix well.
