  • ¼ teaspoon ground black pepper
  • 1 tablespoon soy sauce
  • 1 teaspoon finely minced ginger
  • 1 teaspoon finely minced garlic
  • 1 egg, beaten
  • ½ cup cake flour
  • ½ cup cornstarch
  • ½ cup ice-cold water
  • 1 teaspoon baking soda
  • Vegetable oil, for deep frying
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Pound the chicken breast to an even thickness and cut into strips.
  2. Season chicken strips with salt, pepper, soy sauce, ginger, and garlic; let sit.
  3. In a bowl, sift cake flour, cornstarch, and baking soda. Add beaten egg and cold water; mix until just combined.
  4. Heat oil to 350°F (175°C) in a deep fryer or Dutch oven.
  5. Dip each chicken strip into the batter and fry in batches for about 4 minutes until golden brown.
  6. Drain on paper towels and serve warm with dipping sauces.
