  • 1.5 lbs diced chicken breast
  • 1 large zucchini
  • ½ yellow onion
  • 1 pint grape tomatoes
  • 1.5 cups basmati or long-grain rice (uncooked)
  • 3 cups chicken stock
  • ¼ cup crumbled feta cheese
  • Tzatziki sauce for serving
  • Pickled red onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix smoked paprika, seasoning salt, turmeric, and cayenne pepper.
  3. Combine vinegar, sugar, and salt in a heat-safe bowl; microwave until dissolved. Add sliced red onions and refrigerate.
  4. In a 9×13-inch casserole dish, layer the diced chicken and sprinkle with half the spice mix and Greek seasoning. Add rice, zucchini, and tomatoes.
  5. Whisk chicken stock with remaining spices; pour over the casserole. Top with feta cheese and lemon wedges.
  6. Cover with foil and bake for 40 minutes; remove foil and bake an additional 10-20 minutes until rice is tender.
  7. Fluff casserole before serving; top with extra feta, pickled onions, parsley, tzatziki sauce, and serve warm with pita bread.
