  • 4 boneless, skinless chicken thighs
  • 5 cups romaine lettuce
  • 1 large mango, diced
  • 1 avocado, diced
  • ½ cup freshly squeezed lime juice
  • ½ cup fresh chopped cilantro
  • 4 cloves garlic, crushed
  • 3 tablespoons olive oil
  • 2 teaspoons honey
  • 1 teaspoon brown sugar
  • 1 teaspoon ground cumin
  • 1¼ teaspoons salt
  • 1 red bell pepper, deseeded and sliced
  • 1 green onion, thinly sliced
  • Extra cilantro leaves for garnish
  • Red chili flakes for garnish (optional)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, cilantro, garlic, honey, brown sugar, cumin, and salt. Pour one-third over chicken to marinate for at least 15 minutes.
  2. Grill marinated chicken in a skillet over medium-high heat for about 5-6 minutes per side until cooked through. Set aside to rest.
  3. Sauté red bell peppers in the same skillet until tender.
  4. Combine diced mango, avocado, and green onion in a bowl; mix with reserved dressing.
  5. Slice grilled chicken and assemble salad with romaine, peppers, mango salsa, and additional dressing.
  6. Garnish with cilantro and serve immediately.
