  • Asian sweet chili sauce
  • 1/4 cup flour
  • 1 teaspoon salt

  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon black pepper
  • 2 teaspoons cornstarch
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon Asian chili sauce
  • 1 teaspoon dried basil

Instructions

  1. Make the Coconut Sauce: In a small bowl, whisk together coconut milk, cornstarch, sweet chili sauce, honey, lime juice, soy sauce, and dried basil until smooth; set aside.
  2. Prep the Chicken: Slice chicken breasts in half horizontally to create fillets. Pound to even thickness and pat dry.
  3. Season the Chicken: Combine flour and seasonings in a shallow dish. Dredge each chicken piece in the mixture.
  4. Cook the Chicken: Heat butter and olive oil in a large skillet over medium-high heat. Cook chicken for 4–5 minutes per side until golden brown; transfer to a plate.
  5. Prepare Sauce in Skillet: Lower heat and sauté green onions (white parts), garlic, and ginger until fragrant. Add coconut sauce and simmer until slightly thickened.
  6. Combine and Serve: Return chicken to skillet to warm through in the sauce; serve garnished with cilantro and green onions over rice.
