  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 lbs ground beef
  • 1 lb Yukon Gold potatoes, cut into 1-inch pieces
  • 4 carrots, peeled and sliced
  • 1 can (14.5 oz) green beans, drained
  • 3 tablespoons tomato paste
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 46 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • Salt, pepper, and red pepper flakes, to taste

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sauté onion and celery for 2–3 minutes until soft; add garlic and sauté for another minute.
  2. Add ground beef; cook until browned. Break up meat as it cooks.
  3. Stir in potatoes, carrots, green beans, tomato paste, diced tomatoes, black-eyed peas, corn, seasonings, and 4 cups of beef broth. Adjust broth for desired consistency.
  4. Bring to a boil then reduce heat to medium-low. Cover and simmer for about 14–16 minutes until potatoes are fork-tender.
  5. Serve hot with desired toppings.
