  • 1 ½ cups brown sugar
  • 1 cup cold butter, sliced
  • 1 ½ cups oats
  • 2 (8 oz.) packages cream cheese, room temperature
  • ½ cup sugar
  • 3 eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a food processor, combine flour and brown sugar; pulse until mixed. Add cold butter and pulse until crumbly, then mix in oats.
  3. Reserve 1 ½ cups of the crumb mixture for topping; press the rest into the prepared pan to form the crust. Bake for about 10 minutes until set.
  4. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Then mix in milk, vanilla extract, lemon juice, and zest until creamy.
  5. Pour cheesecake mixture over the baked crust and sprinkle reserved crumbs on top.
  6. Bake for an additional 15-20 minutes until lightly browned on top. Allow to cool completely before cutting into squares.
