- 8 ounces ditalini pasta
- 8 ounces mild Italian ground sausage
- ½ cup sweet onion, diced
- 2 cloves garlic, minced
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- 1–2 tablespoons avocado oil
- ½–¾ cup low sodium chicken broth
- 1–1.5 tablespoons tomato paste
- Pinch of kosher salt, to taste
- Few turns of cracked black pepper, to taste
- Red pepper flakes for garnish
Instructions
- Cook the ditalini pasta in salted boiling water until al dente; drain and set aside.
- In a nonstick sauté pan, heat avocado oil over medium-high heat and brown the sausage. Add onion and garlic; sauté until the onion is translucent.
- Stir in tomato paste and let caramelize for a few minutes. Season with salt and pepper.
- Deglaze with chicken broth; reduce heat and stir in heavy cream until combined.
- Add Parmesan cheese and cooked pasta; toss to coat evenly. Adjust thickness with additional broth if needed.
- Serve garnished with red pepper flakes.
