Instructions

  1. In a large pot over medium heat, heat the olive oil and brown the Italian sausage, breaking it into smaller pieces. Once cooked through, remove from pot.
  2. In the same pot, sauté diced onion and minced garlic until softened.
  3. Add chicken broth and bring to a simmer. Stir in diced tomatoes, cooked sausage, and ditalini pasta; cook per package instructions.
  4. Stir in heavy cream, grated Parmesan cheese, and chopped spinach. Simmer until spinach wilts and soup thickens slightly.
