  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons all-purpose flour
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden brown (4-5 minutes per side). Remove from skillet.
  2. In a medium saucepan, bring chicken broth and salt to boil. Add rice, reduce heat, cover, and simmer for 15-18 minutes until tender.
  3. In the same skillet, melt butter over medium heat. Whisk in flour for 1-2 minutes until lightly golden. Gradually add milk and broth while whisking to form a smooth sauce. Stir in garlic powder, thyme, cheddar, and Parmesan until thickened.
  4. Return chicken to the skillet; spoon sauce over it and simmer on low heat for about 10 minutes until cooked through.
  5. Serve rice topped with creamy chicken and garnish with parsley.
