  • 4 tablespoons butter, divided
  • ¾ cup diced carrots
  • ¾ cup diced celery
  • ¾ cup diced onion
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 cups diced potatoes
  • 3 cups chicken broth
  • ¼ cup all-purpose flour
  • 1 to 2 cups Velveeta cheese, cubed
  • 1 ½ cups whole milk
  • ¾ teaspoon salt
  • ¼ to ½ teaspoon black pepper
  • ¼ cup sour cream (optional)
  • Onion rings (optional)
  • Green onions (optional)
  • Crumbled bacon (optional)

Instructions

  1. In a large pot over medium heat, brown the ground beef for about 6-8 minutes until no longer pink. Drain excess fat.
  2. Melt butter in the same pot and sauté carrots, celery, onions, basil, and parsley for 10 minutes.
  3. Add diced potatoes and chicken broth; bring to a boil. Reduce heat to low and simmer for 10-12 minutes until potatoes are tender.
  4. In a separate pan, melt remaining butter and stir in flour until bubbling. Mix this into the soup and bring to a boil for 2 minutes.
  5. Stir in Velveeta cheese cubes and milk until melted. Adjust seasoning if needed.
