- 12 jumbo pasta shells
- 1½ cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- ½ cup parmesan cheese, grated
- 1 large egg
- 1 cup fresh spinach, chopped
- 2 cups marinara sauce
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta shells in salted boiling water until al dente; drain and cool.
- In a skillet, sauté minced garlic in olive oil, then add spinach until wilted.
- In a mixing bowl, combine ricotta, mozzarella, parmesan, egg, nutmeg (if using), sautéed spinach, salt, and pepper; mix well.
- Spread marinara sauce in a baking dish. Stuff each shell with the filling and place seam-side up in the dish.
- Pour remaining marinara sauce over shells and sprinkle with mozzarella cheese.
- Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes until bubbly.
