Ingredients
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 tablespoons taco seasoning
- 1 can petite diced tomatoes (14.5 ounces), drained
- 1 can refried beans (16 ounces)
- 1 bag frozen tater tots (16 ounces)
- 8 ounces sharp cheddar cheese, shredded
- Optional toppings: shredded lettuce, black olives, sour cream, salsa, diced tomatoes
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onions are soft. Drain excess fat if needed.
- Stir in taco seasoning and drained tomatoes; simmer for about 5 minutes.
- In a greased 9×13-inch baking dish, spread refried beans across the bottom. Layer frozen tater tots on top.
- Spread the beef mixture evenly over the tater tots and sprinkle with cheddar cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
