- 2 (15 oz) cans great northern beans, drained and rinsed
- 2 heaping cups cooked chicken, shredded (rotisserie or leftover)
- 1 cup sour cream or plain Greek yogurt
- 1 cup corn (frozen or fresh)
Instructions
- Heat olive oil in a large pot over medium-high heat. Sauté chopped onion for 3-5 minutes, then add minced garlic and cook for an additional 30 seconds.
- Pour in chicken broth and stir in diced green chilies, cumin, cayenne pepper, oregano, lime juice, salt, and pepper.
- Drain and rinse the great northern beans; blend half for a creamier texture if desired.
- Add blended beans and whole beans to the pot along with corn. Simmer uncovered for 15-30 minutes until heated through.
