- 95g all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 225g dark chocolate, chopped
- 56g butter
- 2 eggs
- 100g caster sugar
- 90g demerara sugar
- 1 teaspoon vanilla extract
- 85g chocolate chips
Instructions
- Preheat the oven to 160ºC (320ºF) fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
- Melt the dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth and mix in vanilla extract.
- In a separate bowl, whip eggs and sugars until thick and fluffy.
- Sift flour, cocoa powder, baking powder, and salt into another bowl.
- Fold melted chocolate into the egg mixture gently, then add dry ingredients until just combined.
- Scoop tablespoon-sized portions onto the lined tray, spacing them apart. Bake for 12-14 minutes until crackly on top.
- Cool on the tray for about 10 minutes before transferring to a wire rack.
