- ¼ cup ghee or butter (divided)
- 1 tablespoon olive oil

- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Heat a large cast-iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
- Cook the potatoes with minced garlic, thyme, oregano, salt, and pepper for about 8-10 minutes until golden brown. Remove from the pan.
- Increase heat to medium-high; add remaining ghee and cubed steak. Sear for about 2-3 minutes until browned.
- Return cooked potatoes to the skillet; stir to combine and adjust seasoning as needed.
