Instructions
- Season chicken thighs with oregano, paprika, salt, and pepper; cook in a heavy skillet until fully cooked.
- In the same skillet, sauté olive oil, grape tomatoes, garlic, and oregano; add spinach until wilted.
- Stir in cooked rice and chickpeas; mix in lemon juice.
- Combine half of the feta mixture with the rice; nestle chicken back in and heat through.
- Garnish with remaining feta and serve immediately.
