  • 1½ cups grated zucchini
  • 2 large eggs
  • ¼ cup avocado oil
  • ⅓ cup maple syrup
  • 2 teaspoons vanilla extract
  • ⅔ cup unsweetened applesauce
  • 1¼ cups whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ⅓ cup chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. Squeeze excess moisture from grated zucchini using a kitchen towel.
  3. In a mixing bowl, whisk together zucchini, eggs, avocado oil, maple syrup, vanilla extract, and applesauce until well combined.
  4. Add whole wheat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt. Stir gently until just combined.
  5. Fold in chocolate chips.
  6. Fill muffin cups about three-quarters full and sprinkle with extra chocolate chips if desired.
  7. Bake for 18–20 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes in the tin before transferring to a wire rack.
