  • 1 ¾ cups white whole wheat flour
  • ½ cup honey or maple syrup
  • ⅓ cup melted coconut oil

Instructions

  3. Stir in milk, baking soda, cinnamon, salt, and nutmeg until blended.
  4. Fold in grated zucchini and flour until just combined; avoid overmixing.
  5. Pour batter into the prepared pan and sprinkle with cinnamon if desired.
  6. Bake for 55-60 minutes or until a toothpick comes out clean.
  7. Cool in the pan on a wire rack before slicing.
