  • 12 ounces milk chocolate
  • 2 tablespoons coconut oil
  • 1 cup marshmallow fluff (store-bought or homemade)
  • 1/3 cup unsweetened flaked coconut, chopped

Instructions

  1. Line a standard 12-cup muffin tin with paper liners. Chop the flaked coconut into small pieces.
  2. Melt the milk chocolate with coconut oil in a double boiler or microwave in 30-second increments until smooth.
  3. Spoon 1 to 1½ tablespoons of melted chocolate into each muffin liner, spreading up the sides. Sprinkle about 1 teaspoon of chopped coconut over each cup and chill for 20 minutes.
  4. Add about 1½ tablespoons of marshmallow fluff to each chocolate cup and top with remaining coconut. Chill again for another 20 minutes.
  5. Re-melt any remaining chocolate and spoon it over the tops of each cup, smoothing it out. Chill for a final 20 minutes until set.
