  • 4 large potatoes, peeled and diced
  • 3 garlic cloves, minced
  • 2 thick bacon strips, cut into pieces
  • 2 tablespoons honey
  • Olive oil
  • Salt
  • Cracked black pepper

Instructions

  1. Boil diced potatoes in salted water for about 8 minutes until just tender. Drain well.
  2. Preheat the oven to 400°F (200°C) and place a lightly oiled baking sheet inside.
  3. Spread the drained potatoes on the hot baking sheet. Drizzle with olive oil, seasoning with salt and cracked pepper. Roast for 30 minutes, flipping halfway through until crispy.
  4. Meanwhile, cook bacon in a skillet over medium heat until crispy. Add minced garlic and cook for an additional minute before stirring in honey.
  5. After roasting, pour the honey-bacon mixture over the potatoes, toss to coat evenly, and return to the oven for another 10–15 minutes until caramelized.
  6. Serve warm, garnished with chopped parsley.
