- 4 large potatoes, peeled and diced
- 3 garlic cloves, minced
- 2 thick bacon strips, cut into pieces
- 2 tablespoons honey
- Olive oil
- Salt
- Cracked black pepper
Instructions
- Boil diced potatoes in salted water for about 8 minutes until just tender. Drain well.
- Preheat the oven to 400°F (200°C) and place a lightly oiled baking sheet inside.
- Spread the drained potatoes on the hot baking sheet. Drizzle with olive oil, seasoning with salt and cracked pepper. Roast for 30 minutes, flipping halfway through until crispy.
- Meanwhile, cook bacon in a skillet over medium heat until crispy. Add minced garlic and cook for an additional minute before stirring in honey.
- After roasting, pour the honey-bacon mixture over the potatoes, toss to coat evenly, and return to the oven for another 10–15 minutes until caramelized.
- Serve warm, garnished with chopped parsley.
