Ingredients
- 1 Honeycrisp apple, seeded and chopped into bite-sized pieces
- 1 large bunch broccoli, chopped into florets (or one 12-ounce bag of prepared florets)
- 1/2 cup chopped red onion
- 1/2 cup raisins
- 1/2 cup sunflower seeds
- 4 slices bacon, cooked and crumbled
- 3/4 cup plain yogurt
- 2 tablespoons milk
- 2 tablespoons apple cider vinegar
- 1/2 cup sugar or 1/4 cup honey
- Salt & pepper, to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a mason jar or small bowl, whisk together yogurt, milk, apple cider vinegar, sugar or honey, salt, and pepper until smooth. Refrigerate.
- In a large mixing bowl, combine chopped Honeycrisp apple, broccoli florets, red onion, raisins, and sunflower seeds. Toss well.
- Pour dressing over the salad mixture and toss again to coat thoroughly.
- Chill in the refrigerator for 30–60 minutes before serving.
- Just before serving, sprinkle crumbled bacon on top.
