  • 1 Honeycrisp apple, seeded and chopped into bite-sized pieces
  • 1 large bunch broccoli, chopped into florets (or one 12-ounce bag of prepared florets)
  • 1/2 cup chopped red onion
  • 1/2 cup raisins
  • 1/2 cup sunflower seeds
  • 4 slices bacon, cooked and crumbled
  • 3/4 cup plain yogurt
  • 2 tablespoons milk
  • 2 tablespoons apple cider vinegar
  • 1/2 cup sugar or 1/4 cup honey
  • Salt & pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a mason jar or small bowl, whisk together yogurt, milk, apple cider vinegar, sugar or honey, salt, and pepper until smooth. Refrigerate.
  2. In a large mixing bowl, combine chopped Honeycrisp apple, broccoli florets, red onion, raisins, and sunflower seeds. Toss well.
  3. Pour dressing over the salad mixture and toss again to coat thoroughly.
  4. Chill in the refrigerator for 30–60 minutes before serving.
  5. Just before serving, sprinkle crumbled bacon on top.
