  • 1 tablespoon avocado oil
  • 1 ¼ pounds boneless, skinless chicken breasts
  • ⅓ cup honey
  • 23 tablespoons sriracha
  • 2 medium zucchini
  • 1 medium summer squash
  • 1 ½ cups shredded carrots
  • 2 cups cooked rice or quinoa
  • Optional: Avocado, lime, and ranch drizzle ingredients

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat oil in a cast iron skillet over medium-high heat; sear chicken for about 5 minutes on each side until browned.
  3. In a bowl, whisk together honey, sriracha, garlic, salt, pepper, and optional spices; set aside some sauce for later.
  4. Sauté zucchini and summer squash in the skillet for about 2 minutes until slightly tender.
  5. Layer shredded carrots on top of vegetables; place seared chicken over veggies and coat with hot honey sauce.
  6. Bake for about 15 minutes until chicken is cooked through; stir veggies halfway through.
  7. Optionally broil for extra caramelization.
  8. Let chicken rest before cubing; toss with reserved sauce.
