  • ½ cup Irish stout (Guinness)
  • ½ cup sharp cheddar cheese, grated
  • 4 brioche burger buns
  • Butter (for toasting buns)
  • ½ cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Cook bacon in a skillet over medium heat until crispy; set aside.
  2. Sauté sliced onions in the same skillet until caramelized, about 10–15 minutes; add Guinness and reduce by half.
  3. In a mixing bowl, combine ground beef with Worcestershire sauce, salt, and pepper; form into four patties.
  4. Grill or cook patties over medium-high heat for 3–4 minutes per side, adding cheddar for the last minute to melt.
  5. In a small bowl, whisk together sour cream, Dijon mustard, and salt for the sauce.
  6. Toast brioche buns in butter until golden brown.
