  • 1 pound ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce or tomato puree
  • 3 ounces tomato paste (about ¼ cup)
  • 4 cups chicken broth
  • 12 cups water
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt
  • Black pepper, to taste
  • 8 ounces bowtie pasta (uncooked)
  • ½ cup ricotta cheese
  • 2 ounces mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, shaved, shredded, or grated
  • ¼ cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large 4.5-quart soup pot over medium-high heat.
  2. Add ground beef, diced onion, and minced garlic; cook until beef is browned.
  3. Stir in diced tomatoes (with juice), tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, pepper, and uncooked pasta.
  4. Bring to a boil over high heat.
  5. Reduce heat and simmer for 10-15 minutes or until pasta is tender.
  6. Adjust consistency with additional water or broth if needed.
  7. Serve hot with desired toppings such as ricotta cheese and fresh parsley.
