Instructions
- Preheat oven to 350°F (177°C). Grease three 8-inch round cake pans and line them with parchment paper.
- In a large bowl, beat softened butter until creamy. Add sugars and mix well. Incorporate eggs and vanilla.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture along with buttermilk, lemon zest, and juice until just combined.
- Toss blueberries in flour and fold into the batter gently.
- Divide batter among pans and bake for 22–26 minutes or until a toothpick comes out clean. Cool completely.
- For frosting, beat cream cheese and butter until smooth; gradually add confectioners’ sugar and mix until fluffy.
