  • 4 large eggs

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan.
  3. Beat cream cheese in a mixer until smooth; gradually add sugar, then eggs one at a time. Mix in vanilla, lemon juice, and zest.
  4. Pour batter into the crust; wrap the pan tightly in foil.
  5. Place in a water bath and bake at 300°F (149°C) for about 90 minutes or until set with a slight jiggle.
  6. Cool in the oven with door ajar for one hour; then chill for at least eight hours.
