  • 2 medium zucchini
  • 2 medium yellow squash
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 tablespoons chopped fresh basil
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare an 8" x 8" or 8" x 11" baking dish with olive oil or non-stick spray.
  2. Slice the zucchini and yellow squash into half-moon shapes. Chop the basil and slice the green onions.
  3. In a large mixing bowl, combine the sliced vegetables, basil, green onions, spices, and half of each cheese type. Mix until well-coated.
  4. Spread the mixture evenly in the baking dish and bake uncovered for 25-30 minutes until veggies are tender.
  5. Add remaining cheese on top and bake for an additional 10-15 minutes until melted and golden.
