Ingredients
- 2 medium zucchini
- 2 medium yellow squash
- 1 cup grated mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 4 tablespoons chopped fresh basil
- 2 tablespoons thinly sliced green onion
- 1/2 teaspoon dried thyme
- 3/4 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat the oven to 350°F (180°C) and prepare an 8" x 8" or 8" x 11" baking dish with olive oil or non-stick spray.
- Slice the zucchini and yellow squash into half-moon shapes. Chop the basil and slice the green onions.
- In a large mixing bowl, combine the sliced vegetables, basil, green onions, spices, and half of each cheese type. Mix until well-coated.
- Spread the mixture evenly in the baking dish and bake uncovered for 25-30 minutes until veggies are tender.
- Add remaining cheese on top and bake for an additional 10-15 minutes until melted and golden.
