Ingredients
- 3 large boneless, skinless chicken breasts
- 1 cup carrot matchsticks

- 1 cup ditalini pasta

Instructions
- In a large pot over medium-high heat, add oil and sauté carrots, onion, and garlic for about 3 minutes.
- Add chicken pieces and sauté until lightly browned, around another 3 minutes.
- Stir in tomato paste, sun-dried tomatoes, chicken broth, Italian seasoning, salt, pepper, and red pepper flakes. Bring to a boil then reduce heat to low and simmer for about 10 minutes.
- Add ditalini pasta; cover and simmer for another 10 minutes while stirring occasionally.
- Incorporate heavy cream, Parmesan cheese, and spinach into the pot. Cover and let sit off the heat for about 5 minutes before serving.
