  • 1 lb boneless, skinless chicken breasts
  • 3 tablespoons grated Parmesan cheese
  • ¼ cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 4 large flour tortillas
  • 2 romaine hearts, chopped
  • 1 cup croutons

Instructions

  1. Slice chicken breasts in half to create cutlets and season with Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 7-10 minutes until golden brown and cooked through (165ºF). Let cool before cutting into bite-sized pieces.
  3. In a bowl, mix mayonnaise, lemon juice, miso paste, Worcestershire sauce, anchovy paste, garlic, and gradually whisk in neutral oil until smooth.
  4. In a mixing bowl, combine chopped romaine, chicken pieces, croutons, and Parmesan cheese. Drizzle with dressing and toss well.
  5. Warm tortillas slightly before adding salad mixture. Roll tightly to form wraps and slice in half.
