  • 32 Lotus Biscoff cookies (8.8 ounces)
  • 1 (10- to 12-ounce) package white chocolate, finely chopped
  • 2 tablespoons Biscoff cookie butter (optional)

  2. Process the Biscoff cookies into fine crumbs using a food processor.
  3. In a microwave-safe bowl, heat 1/4 cup of cookie butter until warm. Combine it with softened cream cheese and cookie crumbs in the food processor; pulse until well mixed.
  4. Roll the mixture into 1-inch balls and place them on the lined baking sheet. Chill for at least 1 hour.
  5. Melt the white chocolate in the microwave or double boiler until smooth.
  6. Dip each truffle into the melted chocolate using a fork, then return to the baking sheet.
