  • 1 pound dried navy beans
  • 8 oz thick-cut bacon, diced
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce or ketchup
  • 1/4 cup molasses
  • 1/2 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp yellow mustard
  • 2 tsp Worcestershire sauce
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Soak the navy beans overnight in a large pot covered with water. Drain and refill the pot with fresh water; boil for an hour and drain again.
  2. In a Dutch oven, fry the diced bacon until crispy. Add chopped onion and garlic; cook until softened.
  3. Stir in tomato sauce, molasses, brown sugar, vinegar, mustard, Worcestershire sauce, paprika, salt, pepper, and bay leaf.
  4. Add cooked beans along with reserved cooking liquid; bring to a simmer for 2–3 minutes.
  5. Preheat the oven to 325°F (160°C). Cover the Dutch oven and bake for 2 to 3 hours, uncovering for the last 20–30 minutes to thicken.
  6. Discard the bay leaf and adjust seasoning before serving.
