- 4 teaspoons chili powder
- 1 (28 oz) can crushed tomatoes
- 8 oz dry elbow macaroni
- 1 ½ cups shredded sharp cheddar cheese
Instructions
- Heat olive oil in a large pot over medium-high heat. Sauté onions and red bell pepper for about 5 minutes until softened.
- Add ground beef, searing for about 3 minutes before breaking it up and cooking until nearly done, about 2 more minutes.
- Stir in minced garlic and spices (chili powder, cumin, smoked paprika), toasting for one minute.
- Pour in crushed tomatoes and chicken broth; stir in macaroni and kidney beans. Season with salt and pepper.
- Bring to a simmer, reduce heat to low, and cook uncovered, stirring occasionally until pasta is tender (12–15 minutes).
- Remove from heat and stir in half-and-half and cheese until creamy.
