  • 6 chicken thighs (skinless, bone-in)
  • 1 ½ cups long-grain rice (uncooked)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 ½ cups vegetable or chicken stock (hot)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a mixing bowl, combine olive oil, salt, pepper, smoked paprika, thyme, oregano, and garlic granules. Coat chicken thighs with the mixture.
  3. In a baking dish, sauté diced onion and minced garlic in olive oil and melted butter. Add hot stock and water along with uncooked rice, salt, and pepper; stir to combine.
  4. Place seasoned chicken on top of the rice mixture.
  5. Cover tightly with aluminum foil and bake for 30 minutes.
  6. Remove foil, spray chicken lightly with oil, and bake uncovered for another 30 minutes or until golden brown.
