  • 5 bone-in chicken thigh fillets, skin removed
  • 1 onion, chopped
  • 2 large garlic cloves, minced
  • 2 tablespoons butter (or olive oil)
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth
  • 1 ¼ cups hot water
  • Chicken rub: paprika, thyme, garlic powder, onion powder, salt, black pepper

Instructions

  1. Preheat oven to 350°F (180°C).
  2. In a baking dish, scatter chopped onion and minced garlic; place butter in the center. Bake for 12-15 minutes until softened.
  3. While baking, mix chicken rub ingredients in a bowl; season both sides of the chicken thighs.
  4. Stir uncooked rice into the baked onion mixture.
  5. Place seasoned chicken on top of the rice and pour hot broth and water around it.
  6. Cover with foil; bake for 30 minutes.
  7. Remove foil; spray chicken lightly with oil if desired. Bake uncovered for another 20 minutes until golden brown and liquid is absorbed.
  8. Let stand for 5 minutes before serving.
