Ingredients
- 5 bone-in chicken thigh fillets, skin removed
- 1 onion, chopped
- 2 large garlic cloves, minced
- 2 tablespoons butter (or olive oil)
- 1 ½ cups uncooked white rice
- 1 ½ cups hot chicken broth
- 1 ¼ cups hot water
- Chicken rub: paprika, thyme, garlic powder, onion powder, salt, black pepper
Instructions
- Preheat oven to 350°F (180°C).
- In a baking dish, scatter chopped onion and minced garlic; place butter in the center. Bake for 12-15 minutes until softened.
- While baking, mix chicken rub ingredients in a bowl; season both sides of the chicken thighs.
- Stir uncooked rice into the baked onion mixture.
- Place seasoned chicken on top of the rice and pour hot broth and water around it.
- Cover with foil; bake for 30 minutes.
- Remove foil; spray chicken lightly with oil if desired. Bake uncovered for another 20 minutes until golden brown and liquid is absorbed.
- Let stand for 5 minutes before serving.
