- 4 pounds rotini pasta
- 64 ounces Italian dressing
- 32 ounces mozzarella cheese (cubed)
- 40 ounces cherry tomatoes (halved)
- 3 green bell peppers (diced)
- 3 red bell peppers (diced)
- 36 ounces sliced black olives (drained)
- Kosher salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the rotini pasta in a large pot according to package instructions until al dente. Drain and rinse with cold water.
- In a very large mixing bowl, combine half of the cooked pasta with half of the Italian dressing, salt, and pepper. Mix well.
- Add half of the mozzarella cheese, cherry tomatoes, bell peppers, and olives. Stir to combine.
- Repeat the process with the remaining ingredients until everything is evenly mixed.
