  • 5 ounces arugula
  • 4 to 5 ounces goat cheese
  • 1 cup dried cranberries
  • ½ cup pecans (toasted)

  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)

Instructions

  1. Optional: Soak thinly sliced red onions in ice water for 10 minutes to mellow their flavor. Drain and pat dry.
  2. In a mason jar, combine olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper. Shake until well mixed.
