  • 4 cups cooked brown or white rice
  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons coconut oil
  • ½ yellow onion
  • ½ green bell pepper
  • ½ red bell pepper
  • 1 large garlic clove
  • 1-inch piece fresh ginger
  • 2 tablespoons soy sauce (gluten-free if needed)
  • 1 tablespoon honey
  • 1½ cups cubed pineapple
  • ¾ cup frozen peas
  • Juice of 1 small lime

Instructions

  1. Season chicken with salt and let sit for 10 minutes. Pat dry.
  2. Heat 2 tablespoons of coconut oil in a large skillet over medium heat. Cook chicken until no longer pink (5-7 minutes). Remove from pan.
  3. In the same skillet, add remaining oil, onion, bell peppers, garlic, and ginger; sauté for about 5 minutes.
  4. Deglaze the pan with soy sauce, then mix in rice, honey, pineapple, and cooked chicken. Reduce heat and cook until heated through (about 5 minutes).
  5. Add frozen peas and lime juice in the last few minutes of cooking.
  6. Serve garnished with green onions and sesame seeds.
