2 chicken breasts (250g each)
100g pretzels
5 tbsp mayonnaise
3 tbsp honey
1 tbsp Dijon mustard
1/4 cup plain flour
2 eggs, beaten
Vegetable oil for frying
1 tsp apple cider vinegar
1/8 tsp onion powder
1/8 tsp garlic powder
2 tsp paprika
3/4 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp oregano
1/2 tsp black pepper
1/4 tsp cayenne pepper
Flaky sea salt, to serve
Finely diced fresh chives, to serve

Instructions

Prepare the honey mustard sauce by mixing mayonnaise, honey, Dijon mustard, apple cider vinegar, onion powder, and garlic powder in a bowl. Set aside.
Crush pretzels using a food processor or zip-lock bag until they form coarse crumbs.
Set up your breading station with flour in one dish, beaten eggs in another, and crushed pretzels in a third. Add half of the spice mix to both the flour and pretzels.
Slice chicken breasts into cutlets, dredge them in flour, dip in egg, then coat thoroughly with the pretzel mixture.
Heat vegetable oil in a heavy-based pan over medium heat until it reaches 180°C (350°F). Fry cutlets for about 3–4 minutes per side until golden brown.
Serve hot with honey mustard sauce drizzled on top or on the side.
